Simple Paleo Spicy Carrot Fries

If a recipe has more than 5 ingredients, I’m out. We eat more home-cooked meals with Paleo, but there’s no reason for them to be either time-consuming or complicated.

Take these simple Paleo carrot fries, for example. My husband knocked them out of the park with two ingredients and some spices… as many or as few as you want (keep scrolling, I’ll explain). How’s that for simple Paleo?

Spicy Carrot Fries

Serves 4

Time: 45 minutes (Prep 10 minutes, Bake for 35ish minutes)

6 Large Organic Carrots

2-3 Tbsp. Organic Coconut Oil, Olive Oil, Grassfed Butter or Ghee

1/2 tsp. Organic Cinnamon (increase if you want more of a spicy fall feeling)

1/8 – 1/4 tsp. Cayenne Pepper (optional. omit if you don’t want spicy)

1 tsp. Paprika

1 tsp. Sea Salt

Here’s the really short, simple, & straightforward directions: Heat your oven to 375F, matchstick the carrots, throw ’em on a pan and toss with the spices. Bake for a while (~20 min), pull ’em out, stir them up, add some more spices. Finish baking when your fork comes out smooth and/or they are crispy on the edges. Remove. Enjoy.

Here’s the step-by-step directions:

Step 1: Heat your oven to 375 degrees Fahrenheit. Wash the carrots. Peel if you want. I personally don’t peel mine but go for it if you want.

Step 2: With a chef knife, cut the carrots length-wise into pieces about the size of your index finger. Then cut each piece in half, then each half into 3-4 pieces. Basically cut your carrots into matchsticks. The thinner you cut them, the crispier and more “fry-like” they will be.

Step 3: Cover an edged baking sheet with aluminum foil. If you’re into measuring, measure out your spices into a medium bowl and mix. Then add the oil or fat (melt first) of your choice and whisk. Add the carrots and stir until evenly coated. Put the carrots on the baking sheet and spread out so several aren’t clumped on top of each other. If you’re up for the simplest and fastest way possible, simply throw the carrots on the baking sheet, drizzle on the oil or fat or your choices, and guestimate the spices by shaking them on till it looks tasty. Whichever way you choose, then throw those bad boys in the oven.

Step 4: In ~15-20 minutes, pull the carrots out, stir, and sprinkle some more spices on if the other side isn’t coated well. I’d leave out the cayenne at this point if you don’t want them hot, but if you do, go for it!

Step 5: Check on your carrots in another 15 minutes. Poke with a fork and remove when they are tender. This moment will depend on how thick/thin your carrots are. Some will be crispy (and that’s okay!).

Step 6: Sprinkle some more salt if they need it and serve! Enjoy!
